I sampled a delicious beef stew at a friend's house long ago. She shared the recipe with me and I misplaced it! When my Husband asked for "the kind of stew you always used to make." I had to recreate it for him. So of course I studied the recipes on JAP! I remembered some of what I used to add and took a few other things out of recipes on here. I knew I couldn't make it on the stove, not being home all day any more, so I adapted it to the slow cooker. I hope you give my "new and improved" recipe a try...and yes, my Husband thought I had found my recipe again! Success.

Ingredients For beef stew

  • 2 lb
    beef stew meat or roast cut into bite sized pieces
  • flour(seasoned) (i used gluten free)
  • oil for browning
  • 1/2 c
    red wine
  • 4
    red potatoes, cut in chunks
  • 6 lg
    carrots, peeled and chunked
  • 1 lg
    onion, peeled and chunked
  • 1
    red pepper, bite sized
  • 1
    green pepper, bite sized
  • 1 stalk
    celery, bite sized
  • 4 oz
    fresh mushrooms, cut in half if large
  • 1 qt
    tomatoes, canned
  • 1 qt
    beef broth, stock or bullion
  • garlic,marjoram, bay leaf, basil, pepper and a pinch of chipotle grill seasoning
  • 1 qt
    frozen green beans

How To Make beef stew

  • 1
    In a large slow cooker layer the chopped vegetables except for the mushrooms.

    Shake the meat cubes in the flour and brown in a heavy dutch oven in batches. I prefer a cast iron pot for this step.

    As the meat browns, remove and add to the top of the veggies in the slow cooker.

    Deglaze the pot with the red wine. (and a bit of water if necessary) Add the seasonings to this liquid and pour over the meat.

    Add the mushrooms, beef broth and the quart of tomatoes with juice on top of all.

    Put the green beans in right away or if there will be time, add them on top of the stew an hour before serving.

    Cook on low for 6 to 8 hours. Give a good stir before serving. Great as leftovers too!
