beef & black bean enchiladas
We love Mexican food and especially Enchiladas. I wanted an easy to prepare recipe with many items in my pantry. The hamburger mixture is so wonderful with the tomato, onion, garlic & chili flavor. Has great flavors with a little heat. Hope you enjoy them as much as we do.

Ingredients For beef & black bean enchiladas

1 lbground beef

1 cantomato & green chilis drained

1 canblack beans, drained & rinsed

1 cansliced black olives
-
1 canlarge red enchilada sauce
-
2 clovegarlic chopped
-
1 mddiced onion
-
1 pkglarge flour tortillas
-
1 pkgfiesta shredded cheese 2 cup size
-
1 pkgtaco seasoning mix
-
1 smsour cream
-
1 baggreen onions
-
4 mdroma tomatoes
-
1 pkgmexican rice
How To Make beef & black bean enchiladas

1Brown hamburger, onions and garlic in large frypan. Drain off grease.

2In Medium bowl combine taco seasoning mix, black beans, tomato & chili's & Black Olives. Mix and add to pan with hamburger, onions and garlic. Mix together.

3Add about a 1/2 cup of red enchilada sauce and let cook on low till flavors combine and absorbs some of juice. Turn off stove.

4Add a half cup of Fiesta Cheese to pan and mix in. Open Tortillas pkg.

5Put 1 tortilla on a flat surface/plate and fill Hamburger mixture to one long end of tortilla. Roll up tortilla. Put seam side down in 9x13 pan. Repeat till all tortillas are filled and put in pan.

6In 9x13 oven proof pan spray to reduce sticking. Put 1 cup of red sauce in bottom of pan and spread over bottom.

7Pour rest of can of red sauce over tortillas. Cover and bake in 350 degree oven for 25 minutes. Uncover and spread shredded cheese over tortillas & bake another 5-7 mins. Or till cheese melts. Take out of oven and let rest about 10 mins. And serve with diced tomatos, green onions & sour cream. Enjoy!
