This is a great meal to start in the morning before you leave the house and have dinner waiting on you when you get home. Pair this with a nice grain like wild rice, quinoa or freekeh.

Ingredients For baked acorn squash (in slow cooker)

  • 2 md
    acorn squash
  • 2/3 c
    cracker crumbs (i use a vegan version)
  • 1/2 c
    coarsly chopped pecans
  • 1/3 c
    vegan margarine
  • 4 Tbsp
    brown sugar ( i used succanat)
  • 1/2 tsp
    salt
  • 1/4 tsp
    ground nutmeg
  • 2 Tbsp
    orange juice

How To Make baked acorn squash (in slow cooker)

    Cut squash in half. Remove seeds.
  • 2
    Combine remaining ingredients. Spoon into squash halves. Place squash in slow cooker.

    Cover. Cook on low 5-6 hours, or until squash is tender.
