This is a great meal to start in the morning before you leave the house and have dinner waiting on you when you get home. Pair this with a nice grain like wild rice, quinoa or freekeh.

Ingredients For baked acorn squash (in slow cooker)

2 mdacorn squash

2/3 ccracker crumbs (i use a vegan version)

1/2 ccoarsly chopped pecans

1/3 cvegan margarine
-
4 Tbspbrown sugar ( i used succanat)

1/2 tspsalt
-
1/4 tspground nutmeg
-
2 Tbsporange juice
How To Make baked acorn squash (in slow cooker)

1Cut squash in half. Remove seeds.

2Combine remaining ingredients. Spoon into squash halves. Place squash in slow cooker.

3Cover. Cook on low 5-6 hours, or until squash is tender.
