Ingredients For baja shrimp tacos w pineapple-mint salsa

  • SALSA
  • 2 c
    diced pineapple
  • 1/4 c
    chopped red onion
  • 3 Tbsp
    chopped fresh mint
  • TACOS
  • 12
    8" flour tortillas
  • 3 Tbsp
    butter
  • 1 lb
    shelled, deveined uncooked medium shrimp
  • 2 Tbsp
    packed brown sugar
  • 1-2
    chipotle chiles in adobo sauce, chopped
  • 1 Tbsp
    adobo sauce
  • 2 c
    shredded romaine lettuce

How To Make baja shrimp tacos w pineapple-mint salsa

    Heat oven to 350. In a medium bowl, stir together all salsa ingredients. Wrap tortillas in foil; heat in oven 10 min.

    Meanwhile, melt butter in heavy large skillet over med-high heat. Add shrimp, brown sugar, chiles and 1 Tbsp. adobo sauce. Cook, stirring constantly, 1-3 minutes or until shrimp turn pink.

    To serve, place shrimp on serving platter, surround with lettuce. Pass salsa and tortillas
