Ingredients For baja shrimp tacos w pineapple-mint salsa

2 cdiced pineapple

1/4 cchopped red onion

3 Tbspchopped fresh mint
- TACOS

128" flour tortillas

3 Tbspbutter

1 lbshelled, deveined uncooked medium shrimp

2 Tbsppacked brown sugar

1-2chipotle chiles in adobo sauce, chopped

1 Tbspadobo sauce

2 cshredded romaine lettuce
How To Make baja shrimp tacos w pineapple-mint salsa

1Heat oven to 350. In a medium bowl, stir together all salsa ingredients. Wrap tortillas in foil; heat in oven 10 min.

2Meanwhile, melt butter in heavy large skillet over med-high heat. Add shrimp, brown sugar, chiles and 1 Tbsp. adobo sauce. Cook, stirring constantly, 1-3 minutes or until shrimp turn pink.

3To serve, place shrimp on serving platter, surround with lettuce. Pass salsa and tortillas
