These red beans and rice really give you a taste of Nawlins cooking. Serve along with some jalapeno cornbread or french bread baguettes.

Ingredients For awesome red beans and rice

1 lbdried light red kidney beans

2 qtwater
-
2 mdyellow onions, chopped

2ribs celery with leaves, chopped

1/2green bell pepper
-
2 1/2 tspkosher salt
-
1 1/2 tspeach - rounded tsp. ground thyme and oregano
-
1 1/4 tsprounded tsp. garlic powder
-
3/4 tspcayenne pepper
-
2bay leaves
-
1 lbsmoked sausage, cut into 1/2 inch pieces
-
hot cooked rice
-
green onions, chopped for garnish
How To Make awesome red beans and rice

1Wash beans and dry well. In a stockpot, combine water and beans and soak overnight.

2When ready to cook, add onion, celery, bell pepper to the beans/water and bring to a boil. Reduce heat, cover, and simmer approximately 1 1/2 hours or until the beans are soft and thickened. Do not stir unless necessary. Add in salt, thyme, oregano, garlic powder, cayenne, bay leaves and sausage. Stir and continue simmering for an additional 30 minutes or until beans are tender.

3Serve beans over hot rice and garnish with chopped green onions.
