  • PLAN/PURCHASE
  • THE CHICKEN & SAUSAGE
  • 3 or 4 slice
    good bacon, chopped
  • 1 md
    chicken breast, boneless, skinless, cut into bite-sized pieces
  • 6 oz
    smoked sausage, cut thickly on the bias
  • salt, kosher variety, to taste
  • white pepper, freshly ground, to taste
  • THE SAUCE
  • 4 oz
    white button mushrooms, stems removed, and sliced
  • 1/4 tsp
    salt, kosher variety, or to taste
  • 1/2 tsp
    white pepper, freshly ground, or to taste
  • 1/2 md
    yellow onion, diced
  • 2 clove
    garlic, minced
  • 1/2 md
    red bell pepper, diced
  • 1/2 md
    green bell pepper, diced
  • 15 oz
    diced tomatoes (1 can) with juice
  • 1 tsp
    dried oregano
  • 1 Tbsp
    ground paprika
  • 1 pinch
    cayenne pepper, or to taste
  • 1 tsp
    coconut sugar
  • salt, kosher variety, to taste
  • white pepper, freshly ground, to taste

    THE CHICKEN & SAUSAGE

    Gather your ingredients.
  • 4
    Place the chopped bacon into a medium-size sauté pan, or cast iron skillet over medium heat.

    Cook until the bacon is crisp, drain on a paper towel, and reserve
  • 6
    Add the chicken, and smoked sausage to the pan, and sprinkle with a bit of salt and pepper.

    Cook until the chicken and sausage begins to brown, about 5 – 7 minutes.

    Remove from the pan, and reserve.

    THE SAUCE

    Gather your ingredients.

    Drain all but 1 tablespoon of the bacon grease from the pan, add the mushrooms, and the onions, and reduce the heat to medium low.

    Cook until the mushrooms begin to release their moisture, and the onions begin to soften, about 10 – 12 minutes.

    Add the garlic and cook until fragrant, about 60 seconds.

    Add the green and red bell peppers, and cook for an additional 4 minutes.

    Add the oregano, paprika, sugar and cayenne, salt, and pepper, and stir to combine.

    Add the diced tomatoes, and stir to combine.

    Add the reserved chicken and sausages.

    Allow the mixture to lightly simmer, for an additional 15 minutes, stirring occasionally.

    Chef's Note: Before serving, do a final seasoning taste.
