3 or 4 slicegood bacon, chopped

1 mdchicken breast, boneless, skinless, cut into bite-sized pieces

6 ozsmoked sausage, cut thickly on the bias

4 ozwhite button mushrooms, stems removed, and sliced

1/4 tspsalt, kosher variety, or to taste

1/2 tspwhite pepper, freshly ground, or to taste

1/2 mdyellow onion, diced

2 clovegarlic, minced

1/2 mdred bell pepper, diced

1/2 mdgreen bell pepper, diced

15 ozdiced tomatoes (1 can) with juice

1 tspdried oregano

1 Tbspground paprika
-
1 pinchcayenne pepper, or to taste

1 tspcoconut sugar

salt, kosher variety, to taste

3Gather your ingredients.

4Place the chopped bacon into a medium-size sauté pan, or cast iron skillet over medium heat.

5Cook until the bacon is crisp, drain on a paper towel, and reserve
-
6Add the chicken, and smoked sausage to the pan, and sprinkle with a bit of salt and pepper.

7Cook until the chicken and sausage begins to brown, about 5 – 7 minutes.

8Remove from the pan, and reserve.

9THE SAUCE

10Gather your ingredients.

11Drain all but 1 tablespoon of the bacon grease from the pan, add the mushrooms, and the onions, and reduce the heat to medium low.

12Cook until the mushrooms begin to release their moisture, and the onions begin to soften, about 10 – 12 minutes.

13Add the garlic and cook until fragrant, about 60 seconds.

14Add the green and red bell peppers, and cook for an additional 4 minutes.
-
15Add the oregano, paprika, sugar and cayenne, salt, and pepper, and stir to combine.

16Add the diced tomatoes, and stir to combine.

17Add the reserved chicken and sausages.

18Allow the mixture to lightly simmer, for an additional 15 minutes, stirring occasionally.

19Chef's Note: Before serving, do a final seasoning taste.

21Sprinkle the reserved bacon on top, put out some bowls and spoons, and serve it up to your happy guests. Enjoy.
