I realize there are probably other Dirty White Bean recipes out there and understand that there is actually another bean that people consider the "White" bean, so I'd like to explain. It all started when I went to the Grocery Store hungry. These are the ingredients that the God's of Hunger pointed out and, once it took shape, I saw "Dirty White Beans". My apologies for any misunderstandings. { ... Psst, you have to be careful these days or somebody may scream 'Copyright!' I plead innocent ... but hungry. :D}

Ingredients For attaboyslim's dirty white beans

  • 1 pkg
    dried large lima beans
  • 3/4 lb
    breakfast sausage (extra sage)
  • 1/2 - 3/4 c
    chopped green bell pepper
  • 1/2 - 1 c
    chopped white onion
  • 1 stick
    celery (chopped)
  • 1 c
    peeled/drained/diced tomatoes
  • to Taste
    preferred seasoning (i went cajun)

How To Make attaboyslim's dirty white beans

    Using the “Quick Soak Method”, beans are sorted and rinsed. Pour 8 Cups – Hot water over beans in a large pot that has a good fitting top on High heat (Uncovered) and bring to a rapid boil. Allow Beans to cook for 2 minutes, cover and remove from heat. Set aside for 1 hour. In a skillet, brown sausage but do not drain. When brown, add peppers and simmer for approx. 10 minutes. Stir and add Celery and simmer an additional 10 minutes. Stir and add Onion and simmer another 10 minutes. Add Seasonings (Zataran, Cajun Spice, Cheyenne Pepper or whatever taste you prefer), stir, cover and simmer 20 minutes. Add Tomatoes, stir, recover and simmer until Beans have finished soaking. Drain Beans, rinse with cold water and return to cook pot and add 6 cups of Hot Water, placing heat on very low simmer. Remove Sausage mixture from heat and pour into colander to drain thoroughly. Return to pan and repeat process. (I tried to remove as much grease as I could and the only salt I've added came in the spice I chose. My 92 year old GrandPa eats my cooking and doesn't need either) Gentle stir into Beans and cover with lid tilted slightly. Simmer for 1 1/2 – 2 Hours depending on preference, gently stirring occasionally. Do Not Allow Beans to Cook Dry. Add hot water as needed. Serve with Butter Milk Biscuits and a picture of Iced Cold Southern Sweet Tea.

    I suppose you could have a piece of Grilled Rosemary Chicken or even Baked Catfish ... and a salad ... if you want but these Beans are filling and I like 'em as the main course.
