my brotherinlaw is a true mexican from mexico he likes spanish style cooking only so i came up with this.

Ingredients For wally's mexican lasagna

  • 9 lg
    corn tortillas
  • 1 lg
    jar speghetti sauce
  • 2 md
    yellow onions diced
  • 1 lg
    container cottage cheese
  • 1/4 c
    fresh cilantro chopped
  • 1/4 c
    fresh parsley chopped
  • 11/2 lb
    ground beef
  • hot sauce to taste

How To Make wally's mexican lasagna

    first you wanta cut up your tortillas into 1 in strips.some may be shorter then others but thats ok. then in a med pot pour your speghetti sauce, cilantro, parsley, hot sauce to taste and stir; cook at a simmer for 15 min. meanwhile brown your ground beef mixed with the onion until its no longer pink; drain slightly. add your speghtti sauce mix in with the cooked ground beef and onion and mix

    take your tortilla strips line the bottom of a 12 by 24 in baking pan or just say lrg baking pan. then spread some cottage cheese over bottom tortilla about a cup then pour your ground beef speghtti sauce mixture over that about a cup then repeat for4 layers top with remaining tortilla strps. place in a preheated 325 degree over for about 45 min to hour. let cool slightly serve in medium slices ummm
