We are trying to eat healthy so I decided to try making enchilada's that would be both healthy and delicious. I husband really loves it.

Ingredients For vegetable enchilada's

1 lgonion

2 mdyellow squash
-
2 mdzucchini
-
1 mdbutternut squash

1 mdgreen bell pepper
-
1 mdyellow bell pepper

1 Tbspolive oil
-
6corn tortillas
-
2 canred enchilada sauce
-
2 cmonterey jack cheese
How To Make vegetable enchilada's

1Preheat oven to 350 Spray 11x13 pan with non-stick cooking spray.

2Peel and chop Butternut squash, chop all your vegetables. In a large skillet heat oil and add vegetables, drizzle with additional olive oil stir to coat. Cover and cook until tender.

3Place a layer of vegetable mixture in bottom of pan, cover with 3 tortilla's, repeat layers. Pour enchilada sauce over top and sprinkle with cheese. Cook for 30 minutes or until bubbly.
