tuna-dillas
(1 rating)
A different take on quesadillas, using tuna. The crunch of the sunflower seeds added to this recipe makes for an interesting touch. I got it from a little Mexican takeout place in San Diego many years ago, with a little spin of my own. Don't let the sound of this throw you off. It really is a quick, easy, and tasty treat!

How To Make tuna-dillas
-
1Sprinkle cheese on a corn tortilla like you would for a quesadilla. Top with tuna. I add a little mayo to the tuna to act as a binder, but you don't have to. Sprinkle with roasted sunflower seeds. Add taco or hot sauce to your taste.
-
2Microwave for about 25 seconds until cheese is melted and tortilla is soft.
-
3Add lettuce and tomatoes if desired and roll up.
