This quick and easy taco casserole is a great weeknight meal. If you love Rotel dip, you'll love this cheesy casserole. It's similar to the Velveeta and Rotel dip, except it is kicked up a few levels. Sour cream makes this super creamy. Rotel and jalapenos add a little kick. Browned ground beef is seasoned with taco seasonings that punch the flavor and adds heartiness to the meal. Adding crushed tortilla chips, though, is what makes this casserole.

Ingredients For taco casserole ole

1 lbVelveeta cheese

3jalapeno peppers, chopped

1 1/2 ptsour cream (24 oz)

1 canRotel tomatoes (10 oz)

1 cantomatoes, diced (14.5 oz)

1 1/2 lbground chuck

1 mdonion, chopped
-
1 pkgtaco seasoning mix

1 pkgtortilla chips, plain
How To Make taco casserole ole

1Brown ground chuck with onion in a skillet. Drain fat, return to skillet, and add taco seasoning. Set aside.

2Melt cheese, sour cream, peppers, and tomatoes in a saucepan over low heat until the cheese is completely melted.

3Combine the meat and cheese mixture.

4Crush the chips and set aside. Layer meat/cheese mixture in a 13"x9" baking dish.

5Top with chips and repeat layers. You should be able to get three layers.

6Ending with chips on top.

7Bake at 350 degrees until the top and sides are bubbly and slightly browned (approximately 30 minutes).
