This quick and easy taco casserole is a great weeknight meal. If you love Rotel dip, you'll love this cheesy casserole. It's similar to the Velveeta and Rotel dip, except it is kicked up a few levels. Sour cream makes this super creamy. Rotel and jalapenos add a little kick. Browned ground beef is seasoned with taco seasonings that punch the flavor and adds heartiness to the meal. Adding crushed tortilla chips, though, is what makes this casserole.

Ingredients For taco casserole ole

  • 1 lb
    Velveeta cheese
  • 3
    jalapeno peppers, chopped
  • 1 1/2 pt
    sour cream (24 oz)
  • 1 can
    Rotel tomatoes (10 oz)
  • 1 can
    tomatoes, diced (14.5 oz)
  • 1 1/2 lb
    ground chuck
  • 1 md
    onion, chopped
  • 1 pkg
    taco seasoning mix
  • 1 pkg
    tortilla chips, plain

How To Make taco casserole ole

  • Taco seasoning added to browned ground beef and onion.

    Brown ground chuck with onion in a skillet. Drain fat, return to skillet, and add taco seasoning. Set aside.
  • Cheese, sour cream, peppers, and tomatoes melted in a saucepan.

    Melt cheese, sour cream, peppers, and tomatoes in a saucepan over low heat until the cheese is completely melted.
  • Stirring beef into melted cheese.

    Combine the meat and cheese mixture.
  • A layer of meat/cheese added to the baking dish.

    Crush the chips and set aside. Layer meat/cheese mixture in a 13"x9" baking dish.
  • Crushed tortilla chips sprinkled over meat/cheese layer.

    Top with chips and repeat layers. You should be able to get three layers.
  • Layers repeated ending with chips.

  • Baking the taco casserole.

    Bake at 350 degrees until the top and sides are bubbly and slightly browned (approximately 30 minutes).
