An easy and budget-friendly meal your whole family will love. This taco casserole has all the Tex-Mex flavors of a taco. We love how the refried beans are jazzed up with salsa and taco seasoning. Simple and delish, top the casserole with your favorite taco toppings. We opted for a little extra salsa and sour cream. This recipe can also easily be doubled.

Ingredients For taco casserole

  • 1 Tbsp
    butter, cold
  • 1 bag
    tortilla chips (any of your choice), crushed
  • 1 can
    refried beans (16 oz)
  • 1/2 c
    cheddar cheese or of your choice, shredded
  • 1/4 c
    salsa
  • 2 Tbsp
    taco seasoning mix
  • 1 lb
    ground beef
  • 1 pkg
    taco seasoning mix (minus the two tablespoons used in the refried beans)
  • 1 c
    sharp cheddar cheese (never hurts to use even more if liked)
  • Additional toppings: tomatoes, shredded lettuce, sour cream, black olives, salsa, etc.

How To Make taco casserole

We eyeballed the crushed tortilla chips and added about 5 ounces.
  • Refried beans, shredded cheese, salsa, and taco seasoning in a pot.

    In a small saucepan, heat refried beans (1 can), 1/2 cup shredded cheese (of your choice), 1/4 cup salsa (of your choice), and 2 Tbsp taco seasoning mix until heated through.
  • Browning ground beef with taco seasoning.

    In a skillet, cook ground beef, and taco seasoning (minus the 2 Tbsp used in the refried beans) according to directions.
  • Crushed tortillas in a greased baking dish.

    Butter/marg/grease the bottom and sides of an 8x8 casserole dish with 1 tablespoon cold butter. Cover the bottom of the dish with crushed tortilla chips (using enough to cover the bottom of the casserole dish).
  • Half of the refried beans spread over the tortilla chips.

    Place half of the bean mixture (spreading as evenly as possible) over tortilla chips.
  • Adding half the ground beef mixture and a sprinkle of cheese to the baking dish.

    Place half of the ground beef mixture over the tortilla and bean mixture layer. Top with cheese.
  • Layers repeated.

    Repeat layers: tortilla chips, bean mixture, meat mixture, and top with LOTS of shredded cheese.
  • Baking the Taco Casserole.

    Bake in a 350 to 375° oven for 35 to 45 minutes or until the cheese is browned.
  • Taco Casserole on a plate with salsa and sour cream.

    Serve with fresh or canned diced tomatoes, shredded lettuce, and sour cream. Add any toppings of your choice: black olives, salsa, etc.
