Ingredients For sunny anderson's second chance taco salad

2 or 3leftover hamburger patties (or 1 lbs ground beef)

1/2 csalsa

1leftover ear of grilled corn, kernels removed (or a can of corn, drained)

1 canblack beans, rinsed and drained
-
1/2head of iceburg lettuce, rinsed and shredded
-
1/4 cpitted and sliced black olives
-
1bag tortilla chips, slightly crumbled
-
1 cshredded cheddar and jack cheese blend
-
3roma tomatoes, seeded and chopped
- CREAMY LIME DRESSING
-
2 Tbspcilantro, chopped
-
1 Tbspred wine vinegar
-
1 tsplime zest
-
1/4 clime juice (or juice of 2 limes)

1 clovegarlic, smashed
-
1 Tbsphoney
-
1/2 colive oil, extra virgin
How To Make sunny anderson's second chance taco salad

1Either crumble the leftover hamburgers, or cook the hamburger meat with salt and pepper (drain off when done). In a medium-size bowl, combine the hamburger meat and salsa. Stir well and set aside.

2In a large salad bowl, toss the corn, black beans, lettuce and black olives together.

3Garnish the salad with tortilla chips, cheese, tomatoes, hamburger-salsa mixture and pickled jalapeño slices. Dress the salad with Creamy Lime Dressing and serve immediately

4TO MAKE THE DRESSING: In a blender, pulse all the ingredients except the olive oil, salt and pepper until smooth. While machine is running, slowly drizzle in the oil until incorporated. Season with salt and pepper. Use immediately or refrigerate up to 2 days.
