    leftover hamburger patties (or 1 lbs ground beef)
  • 1/2 c
    salsa
  • 1
    leftover ear of grilled corn, kernels removed (or a can of corn, drained)
  • 1 can
    black beans, rinsed and drained
  • 1/2
    head of iceburg lettuce, rinsed and shredded
  • 1/4 c
    pitted and sliced black olives
  • 1
    bag tortilla chips, slightly crumbled
  • 1 c
    shredded cheddar and jack cheese blend
  • 3
    roma tomatoes, seeded and chopped
  • CREAMY LIME DRESSING
  • 2 Tbsp
    cilantro, chopped
  • 1 Tbsp
    red wine vinegar
  • 1 tsp
    lime zest
  • 1/4 c
    lime juice (or juice of 2 limes)
  • 1 clove
    garlic, smashed
  • 1 Tbsp
    honey
  • 1/2 c
    olive oil, extra virgin

How To Make sunny anderson's second chance taco salad

    Either crumble the leftover hamburgers, or cook the hamburger meat with salt and pepper (drain off when done). In a medium-size bowl, combine the hamburger meat and salsa. Stir well and set aside.

    In a large salad bowl, toss the corn, black beans, lettuce and black olives together.

    Garnish the salad with tortilla chips, cheese, tomatoes, hamburger-salsa mixture and pickled jalapeño slices. Dress the salad with Creamy Lime Dressing and serve immediately

    TO MAKE THE DRESSING: In a blender, pulse all the ingredients except the olive oil, salt and pepper until smooth. While machine is running, slowly drizzle in the oil until incorporated. Season with salt and pepper. Use immediately or refrigerate up to 2 days.
