i got this recipe from one of my patient's family members. It was really good! Just something different.

Ingredients For squash enchiladas

5 cyellow squash

1onions, small white
-
3 Tbspranch dressing pkt

10corn tortillas

1 ptsour cream
-
1/2 cancream of mushroom soup

1 pkgcheddar cheese, shredded

salt and pepper

1jalapeno peppers chopped
How To Make squash enchiladas

1boil squash and onion until tender, add jalapeno drain off liquid add ranch seasoning, stir, add salt and pepper to taste soften corn tortillas in microwave place a few tsps of mixture on tortilla and sprinkle with cheese roll up and place in a greased 9x9 baking dish warm soup and add sour cream, ranch seasoning pour over rolled tortillas sprinkle with cheese bake at 325 for 15 min
