i got this recipe from one of my patient's family members. It was really good! Just something different.

Ingredients For squash enchiladas

  • 5 c
    yellow squash
  • 1
    onions, small white
  • 3 Tbsp
    ranch dressing pkt
  • 10
    corn tortillas
  • 1 pt
    sour cream
  • 1/2 can
    cream of mushroom soup
  • 1 pkg
    cheddar cheese, shredded
  • salt and pepper
  • 1
    jalapeno peppers chopped

How To Make squash enchiladas

  • 1
    boil squash and onion until tender, add jalapeno drain off liquid add ranch seasoning, stir, add salt and pepper to taste soften corn tortillas in microwave place a few tsps of mixture on tortilla and sprinkle with cheese roll up and place in a greased 9x9 baking dish warm soup and add sour cream, ranch seasoning pour over rolled tortillas sprinkle with cheese bake at 325 for 15 min
