Fajitas are an easy dinner option and this slow cooker version is fabulous. The meat is tender and absorbs the flavor of the spices and jalapeno. We opted for steak, but chicken would be super tasty too. These Crock Pot fajitas are great if you're busy and figuring out dinner. The slow cooker does all the work for you. Just set out your favorite toppings and each family member can assemble their own fajitas.

Ingredients For slow cooker fajitas

  • 2 lb
    flank or skirt steak or chicken breast
  • 1
    onion, thinly sliced
  • 1
    red pepper, sliced in strips
  • 1
    green pepper, sliced in strips
  • 1 clove
    garlic, crushed
  • 1
    jalapeno, finely chopped
  • 2 tsp
    chili powder
  • 1/2 tsp
    ground cumin
  • 1/4 tsp
    salt
  • 1/4 c
    vegetable oil
  • 1 Tbsp
    fresh lemon juice

How To Make slow cooker fajitas

  • Slicing steak into strips.

    Cut meat against the grain into 1/2 diagonal strips.
  • Strips of steak in the slow cooker.

    Place in the slow cooker.
  • Onions and peppers added to the slow cooker.

    Top with onions and peppers.
  • Garlic, jalapenos, chili powder, cumin, salt, oil, and lemon juice in a mixing bowl.

    In a small bowl, combine garlic, jalapenos, chili powder, cumin, salt, oil, and lemon juice.
  • Pouring mixture over meat and veggies.
