Fajitas are an easy dinner option and this slow cooker version is fabulous. The meat is tender and absorbs the flavor of the spices and jalapeno. We opted for steak, but chicken would be super tasty too. These Crock Pot fajitas are great if you're busy and figuring out dinner. The slow cooker does all the work for you. Just set out your favorite toppings and each family member can assemble their own fajitas.

Slow Cooker Crock Pot
Ingredients For slow cooker fajitas

2 lbflank or skirt steak or chicken breast

1onion, thinly sliced

1red pepper, sliced in strips

1green pepper, sliced in strips

1 clovegarlic, crushed

1jalapeno, finely chopped

2 tspchili powder
-
1/2 tspground cumin
-
1/4 tspsalt

1/4 cvegetable oil
-
1 Tbspfresh lemon juice
How To Make slow cooker fajitas

1Cut meat against the grain into 1/2 diagonal strips.

2Place in the slow cooker.

3Top with onions and peppers.

4In a small bowl, combine garlic, jalapenos, chili powder, cumin, salt, oil, and lemon juice.

5Pour mixture over the meat and veggies.

6Cover and cook on low for six to seven hours.

7Serve on warm flour tortillas with sour cream, shredded cheese, and avocado.
