Ingredients For santa fe taco-- low calorie

  • 1 sm
    flour tortilla
  • 1/4 c
    egg substitute like egg beaters
  • 1/2 tsp
    mrs dash tomato basil garlic seasoning
  • 1/2 tsp
    fresh ground flax seed (optional)
  • 1 Tbsp
    red bell pepper, diced (heaping tablespoon)
  • 1 Tbsp
    zucchini, shredded (heaping tablespoon)
  • 1 Tbsp
    colby jack cheese, shredded (heaping tablespoon)
  • 1 Tbsp
    salsa

How To Make santa fe taco-- low calorie

    Heat a small skillet over medium heat. Spray lightly with nonstick spray.

    In a small bowl, add Mrs Dash and flax to the egg substitute; stir well. Set aside.

    Spread zucchini and pepper along bottom of heated skillet. Let cook for about 1-2 minutes until heated through. Pour in egg mixture. Allow to slowly cook, pulling back edges and tilting pan to let uncooked mixture onto bottom of pan. When almost fully cooked, sprinkle in cheese; fold egg in half. Turn off heat and let sit in pan for a bit for cheese to melt.

    Meanwhile, heat tortilla according to package directions. (TIP-- place tortilla on top of cooked egg, place lid over all. Burner should be off. The steam will heat the tortilla.) Put egg in tortilla and spread salsa of your choice on top of egg. Enjoy!
