Ingredients For tex-mex corn (sallye)

  • 1 pkg
    frozen sweet corn (14-16 ounces)
  • 1 Tbsp
    cooking oil
  • 1 lg
    white onion, chopped fine
  • 2 Tbsp
    chili powder
  • 2 c
    tomato juice (or tomato puree)
  • 2 Tbsp
    butter
  • 1 tsp
    garlic powder
  • pinch
    salt & pepper to taste
  • pinch
    ground cumin
  • 1 sm
    can pikled sliced jalapenos, drained

How To Make tex-mex corn (sallye)

    Preheat oven to 350º butter 9x13 baking dish and set aside
  • 2
    In heavy skillet, saute onion in cooking oil over medium high heat until golden yellow
  • 3
    In large mixing bowl, combine corn and all other ingredients, including sauteed onions. Mix well

    Transfer mixture to buttered baking dish Bake at 350º for 30-45 minutes
