Ingredients For chilled rice & corn salad

  • 2 c
    brown rice, cooked
  • 1 can
    black beans, drained and rinsed
  • 1 can
    corn, drained and rinsed
  • 1 can
    rotel (with juice)
  • 2 tsp
    dried diced onion
  • 1/2 tsp
    chili powder (cayenne would be good too)
  • 1/4 c
    italian dressing, fat-free
  • salt and pepper to taste

How To Make chilled rice & corn salad

  • 1
    Mix together all ingredients.
  • 2
    Refrigerate for at least 1 hour.
  • 3
    Serve over shredded lettuce and topped with light sour cream if desired.
