Ingredients For chilled rice & corn salad

2 cbrown rice, cooked

1 canblack beans, drained and rinsed

1 cancorn, drained and rinsed

1 canrotel (with juice)

2 tspdried diced onion
-
1/2 tspchili powder (cayenne would be good too)

1/4 citalian dressing, fat-free
-
salt and pepper to taste
How To Make chilled rice & corn salad

1Mix together all ingredients.

2Refrigerate for at least 1 hour.

3Serve over shredded lettuce and topped with light sour cream if desired.
