Ingredients For lip smaking veggie pasta even picky kids will eat!

1 mdyellow squash, cubed

1 mdchayote squash, cubed

3 clovegarlic, minced
-
1/2 mdred bell pepper

1/2 mdgreen bell pepper

1/2 smred onion
-
4 tspolive oil
-
1 pkgveggie elbow pasta (12 oz)

1 mdroma tomatoe
-
2 cshredded mozzarella, reduced fat
-
3 cspaghetti sauce, meatless
-
1/2 cphiladelphia cooking creme, santa fe blend
How To Make lip smaking veggie pasta even picky kids will eat!

1Heat Oven to 375 and spray inside of a 13 x 9 glass pan. Bring water to boil and cook pasta, drain when done and set aside.

2While pasta is cooking sautee Chayote and Yellow squash for 4-5 min over medium heat. Add onion and peppers and continue to sautee for 3 minutes. Add garlic and continue to sautee for 1 minute.

3Add squash mixture to large bowl and add cooked pasta. Mix. Add spaghetti sauce and stir. Add 1 cup of cheese and cooking creme and mix again.

4Spread mixture in pan and bake for 10 minutes. Remove from oven.

5Top with remaining cheese and continue baking for an additional 8-10 minutes.

6Serve with red pepper flakes or Parmesan cheese.
