This is a dish that I created trying to re-create the tasty carnitas I had in Mexico It is delicious served open faced on tortillas and homemade re fried beans, or eat as a sandwich. The flavor explodes, caution this is very addicting!

Ingredients For pam's carnitas

    pork roast
  • 1 lb
    bacon cut up
  • 1 sm
    onion
  • 3 Tbsp
    minced garlic
  • lawry's seasoning salt
  • PAM'S CARNITAS

How To Make pam's carnitas

    first a bake a pork roast (add seasoning salt and minced garlic) for about 3 to 4 hours until it falls to pieces (which I did night before) then I take a pound of bacon and cut into little pieces and mince up an onion...fry this until bacon is about 1/2 done then remove onion and bacon (leave grease in pan) then place in bacon grease until golden brown add bacon and onion back in done when golden brown and slightly crisp.....then eat on Tortillas :) delish!
