i like to make these in the springtime when my family and i can eat outside. makes a pleasently different kind of lunchtime treat.

Ingredients For oven fried quesadillas

2 1/2 cmonterey jack cheese (melted)

1 jarmarinated artichoke hearts, drained and chopped
-
1 canslice ripe black olives, drained
-
2/3 cpicante sauce
-
1/2 ctoasted almonds, chopped
-
1/4 cloosely packed cilantro, chopped
-
88 inch flour tortillas
-
3 Tbspbutter (melted)
How To Make oven fried quesadillas
-
1preheat oven to 350
-
2combine cheese, artichoke hearts, olives, picante sauce and almonds in a large bowl
-
3brush one side of 4 tortillas with butter and place butter side down on baking sheet
-
4place one cup of cheese mixture on each tortilla and spread within 3/4 inch of edge; top with remaining tortillas, pressing firmly

5brush top of tortillas with butter
-
6bake at 350 about ten min or until tops are lightly browned

7remove from oven and let stand 3 to 5 min

8cut each quesadilla into 8 wedges

9serve with additional picante and lime wedges
