oven "fried" chimichangas

I LOVE Chimichangas, but dislike frying anything! These are easy and very good!

Ingredients For oven "fried" chimichangas

  • 2/3 c
    picante sauce or your favorite salsa
  • 1 tsp
    cumin
  • 1/2 tsp
    dried crushed oregano
  • 1 1/2 c
    cooked chicken-chopped
  • 1 c
    shredded cheddar cheese
  • 1/4 c
    chopped green onions (i've used regular before)
  • 6
    8" flour tortillas
  • 2 Tbsp
    margarine melted
  • additional cheese and salsa for topping as well as sour cream or whatever you desire

How To Make oven "fried" chimichangas

  • 1
    Mix salsa, cumin, oregano, cooked chicken, cheese and onions.

    Place about 1/4 cup of chicken mixture in the middle of each tortilla. Fold opposite sides over filling. Roll up from bottom and place seam side down on a baking sheet.

    Brush with melted margarine

    Bake at 400 for about 20-25 minutes until golden brown. I have also added black beans to the chicken mixture. Serve with salsa, cheese, sour cream, guacamole....whatever you like!
