I know there are a lot of Frito Casserole recipes out there, but this version is my favorite! Everyone from kids to adults seem to enjoy it, and it is sooo easy!

Ingredients For my favorite corn chip tamale casserole

  • 1 can
    tamales (prefer hormel's)
  • 1 can
    chili with beans (prefer dennison's)
  • 1 - 2
    green onions, white and green parts - finely sliced
  • 1 - 2 c
    grated cheddar cheese (i use mild)
  • 1 to 1 1/2 c
    corn chips (such as fritos)

How To Make my favorite corn chip tamale casserole

    Remove paper from tamales and place in small baking dish, along with liquid from can. Slice each tamale into 3 - 4 pieces. Sprinkle with half of the chopped green onion.

    Spread chili with beans over the tamales. Sprinkle with rest of green onions. Sprinkle with plenty of cheese!

    Put corn chips in a baggie, and with hands or rolling pin, crush and spread over cheese to cover.
    *You can put the cheese on top of the corn chips, but I like the cheese to melt directly onto the beans.

    Bake at 350 degrees for 25 minutes, or until heated through. Serve with condiments of your choice - I use sour cream and taco sauce. A great quick and tasty meal!
