By no means an authentic mole, but a quicker mole with all the flavor, topping a delish vegetarian sandwich! You will have leftover mole; store in fridge and use for more sandwiches, or mix into rice.. it is very tasty.

Ingredients For mole sandwich

1sweet pepper... i used a green / yellow bell pepper

1yellow onion, diced
-
6button white mushrooms, diced
-
1 canvegetable broth
-
1 Tbspsofrito; i used goya

1 tspcinnamon
-
2heaping tablespoons dark cocoa powder
-
2 tspsalt
-
1 tsppepper
-
1turnip
-
2garlic cloves, peeled andd roughly smashed (but not separated)
-
2 slicepepperjack cheese
-
2 slicewspanialy cheese (polish cheese. this is optional!)
-
1avocado
-
1hearty bread roll
-
few dashes of lime juice
-
few dashes of dried cilantro
How To Make mole sandwich

1Quarter pepper. Roast on stovetop burner. In the meantime, sautee onion in olive oil.

2Add mushrooms to onions. Roughly slice roasted peppers and add to onions. Add vegetable broth, all the spices, and sofrito.

3Stir well and let simmer 10 minutes. Blend mixture in 2-3 batches (ladle into blender). Return mixture to pot.

4Peel turnip. Finely dice half of it, and finely slice the other half. Add the diced turnip to the mole, and reserve the slices.

5Add smashed garlic cloves. Cover and let simmer for 10 minutes, stirring occasionally.

6Slice your roll in half, lengthwise, but don't cut all the way through. Smear on avocado andd douse with a couple of lime juice squirts.

7Layer on sliced turnip.

8Layer on the cheese.

9Pour on a few ladles of the mole. Center it in the middle. It will slowly melt the cheese underneath. Add a few dashes of dried cilantro on top.

10Eat like this: pinch ends with hands and eat into it lengthwise! MMMmmmmm!
