Another family favorite! I taught at a preschool where they served this; however, I added my own spin on it to make it even better.

Ingredients For mexican cornbread dish

2 boxcornbread mix (make as directed)

1 1/2 lbhamburger, browned & drained

1 pkgtaco seasoning mix (make as directed)

1 1/2tomatoes, sliced & diced
-
1 pkgmexican blend shredded cheese
-
sour cream
-
salsa, chunky
How To Make mexican cornbread dish

1Make cornbread as directed on box & place in a baking dish. Cook until almost done.

2Remove from oven & spoon seasoned hamburger all over cornbread. Then top with cheese.

3Place back into oven for remaining amount of cooking cornbread; as well as, melting cheese (usually about another 5-10 minutes).

4Remove from oven & top with tomatoes. Add sour cream & salsa if you wish.
