Ingredients For mexican casserole

  • 1 lb
    ground beef
  • 3 can
    chili beans
  • 3 c
    cooked rice
  • 1
    medium onion-diced
  • 1
    medium bell pepper-diced
  • 1 pkg
    taco seasoning mix
  • 1 1/2 c
    shredded cheddar/jack cheese
  • 1 1/2 c
    shredded mozzerella
  • 1 1/2 c
    broken tortilla chips

How To Make mexican casserole

    In large Dutch oven, brown ground beef with peppers and onions, drain off fat. Add taco seasoning, mix well, add chili beans and heat until just bubbly..stir in rice. Pour mixture into a 9x2x13 baking dish, spread cheeses evenly over top. Bake at 350 until cheese is melted, add tortilla chips..serve with warm garlic toast!
