Menudo is a classic mexican soup fabled as a weapon used to battle "Montezuma's Revenge". This recipe was given to me by my wife's aunt Sylvia (after 6 years of begging) and is not as labor intensive as some recipes but the flavor is fantastic. UPDATE: I recently made this exact recipe using InstaPot pressure cooker. The only modification made was to reduce the initial cook time from 4 to 1 hour under pressure and only one bottle of menudo seasoning. Once I added hominy, I adjusted seasoning with a little more menudo seasoning and salt and cooked under pressure for 20 more minutes.

Ingredients For menudo

15 lbhoneycomb tripe (washed, trimmed of fat, cut into 1 1/2 inch pieces and washed again)

1 galyellow hominy

4pig feet

2 bottlegebhardt menudo spice

1/4 csalt

3 Tbspgarlic powder

2 Tbspground cumin
How To Make menudo

1Place cleaned Tripe in roaster and fill with water to cover. Add all spices. Cook at 400 for about 4 hours stirring every hour or so. Add more water if necessary.

2Drain hominy, add to menudo, adjust seasoning with menudo seasoning and salt and cook for an additional hour.

3Serve with diced jalapenos, diced onion, chopped cilantro, lime wedges, crushed dried oregano and corn or flour tortillas.
