Mexican is one of the many foods that i love to cook. This is a recipe that i made specifically for my brother because he fancies Mexican as well-- Trust me when you read this, you WILL NOT be disappointed once you make and eat this. *make with a little love and a dash of salt* ENJOY ;p

Ingredients For los huevos al estilo jalisco

  • 1/2
    avacado (sliced)
  • 1
    egg
  • 1/4
    plantain
  • 1 c
    oil
  • 1
    chorizo (mexican sausage, mild or medium
  • 1/2 c
    cilantro
  • 1/3 c
    queso fresco (crumble cheese)
  • 1/2 c
    pico de gallo
  • 1/2
    lime

How To Make los huevos al estilo jalisco

    prep all food by: chopping avacado, plantain, cilantro, and meat (if the chorizo has casing, cut it off and take about 1/4 of one sausage link, ball it up and flatten into patties (serves one person... but it's up to you ;D)

    i just bought the already made pico de gallo (fresh) i was lazy that day. lol. **if not, cut up a whole large yellow onion, about 2 large tomatoes, 2 jalapenos, squeeze a whole lime, 1/4 c cilantro chopped, and add about 1 T salt***

    set the salsa, avacado, cilantro in fridge, along with the cheese. set aside plantain, and plate tortilla.

    heat pan medium heat and add chorizo. making sure to flip about 2-3 minutes until dark brown. place on tortilla. place 1/4 cup oil in pan heat to medium and add egg, once edges are browned, scoop out and place on top of chorizo. (be careful not to break yolk ;D)

    place the rest of the oil into pan (3/4 cup) medium heat. add plantains & flip when browned. place on papertowels---- make sure while they're still hot from grease to pinch salt and sprinkle over them ;P

    just add pico de gallo, plantains, queso fresco, avacado, and cilantro.. don't forget to squeeze that lime..... and vuala! your done!!! yummy ;P
