Ingredients For hot tamale pie

1 Tbspolive oil

1 tspdijon mustard

1 Tbsplemon juice

1 cyellow cornmeal
-
3 cwater
-
dashcayenne pepper
-
1/2 tspsea salt

1 tspcumin
-
1 tspchili powder
-
1ear corn, kernels cut off
-
1 canpinto beans rinsed and drained
-
1 canunsweetened tomato sauce, 16 ounces

2garlic, minced
-
1bell pepper, yellow, red or green, finely chopped

1onions, finely chopped
-
1/2 tspsea salt
How To Make hot tamale pie

1Heat the olive oil in a large frying pan over medium-high heat.

2Add the onion bell pepper, and garlic and cook until softened. 6 to 8 minutes

3Remove from the heat and stir in the tomato sauce, pinto beans, corn, chili powder, cumin, salt and cayenne.

4Pour into an 8 x 8 glass baking dish.

5Preheat the oven to 350 degrees.

6Boil the water add the cornmeal, lemon juice, mustard, and salt in a large saucepan, and stir until mixed.

7Bring to a boil over medium-high heat, then immediately reduce the heat to low and simmer, stirring often, until thickened, 4 to 5 minutes.

8Spread the cooked cornmeal over the bean mixture.

9Bake for 30 minutes.

10Cool for 10 minutes before serving.
