Great soup/stew! Wonderful flavors that you can easily change. Hence the 3 ways.

Ingredients For harvest soup three ways

    celery stalks sliced thin
  • 3 clove
    garlic minced
  • 1/2 c
    chopped onion
  • 1/2 c
    barley
  • 1 can
    diced fire roasted tomatoes (don't drain)
  • 12 oz
    bag of cubed butternut squash (walmart)
  • 1
    zuchinni diced
  • 6 c
    vegetable broth
  • 1 can
    green beans
  • 1 can
    white beans drained
  • 8 oz
    smoked sausage cubed
  • pinch of salt and pepper
  • 1 tsp
    cajun seasoning

How To Make harvest soup three ways

  • 1
    heat a soup pot with 1 tbs of olive oil. Cook celery, garlic, onion and barley over med. heat for 3-4 minutes
  • 2
    Add rest of ingredients...bring to a boil then reduce to low for 90 minutes. Enjoy

    Variation number two. Cook 8 oz of ground turkey instead of sausage. Add italian seasoning instead of cajun spice
  • 4
    Variation number three. Cook 8 oz of lean ground sirloin instead of sausage. Add 1 can of chopped green chili and instead of cajun spice add chili spice.
