Refreshing salad for those hot summer months

Ingredients For guacamole salad

    avocados
  • 2
    limes
  • 1
    red onion
  • 4
    cloves of garlic
  • 1
    yellow bell pepper
  • 1
    can black beans
  • 1
    pint cherry tomatoes
  • 1
    jalapeno pepper

How To Make guacamole salad

    Slice avocados in half (remove pit) slice avocados in large chunks, chop onion, yellow bell pepper and halve the cherry tomatoes, mince the 4 cloves of garlic. and finely chop one jalapeno pepper. Layer all the above in a bowl (does not need to be in any particular order.)

    Zest two limes over ingredients then juice the limes and drizzle over ingredients.

    Rinse on can of black beans, drain well and add to bowl. Salt and pepper (to taste - sea salt works best.) Toss and enjoy!

    Feel free to add more lime juice if you prefer. Two limes seem to work best to not hide any of the flavors.
