This is a healthier version of ground beef enchiladas and still just as good. I think my family actually prefers the ground chicken over beef. A nice change as well.

Ingredients For ground chicken enchiladas

  • 1 lb
    ground chicken
  • 1
    onion
  • 1
    orange bell pepper
  • 1 pckg.
    taco seasoning mix
  • 1 can
    red enchilada sauce
  • 1 can
    green enchilada sauce
  • 1 can
    refried beans (optional)
  • 1 pckg.
    mexican shreeded reduced fat or reduced fat cheddar cheese
  • 1 pckg.
    fat free flour tortilla shells

How To Make ground chicken enchiladas

  • 1
    chop onion and bell pepper, throw in with chicken cook until chicken is done and onion,bell peppers are tender drain and add taco seasoning packet mixed with water according to directions.cook until well blended and mixture starts to thicken add a handful of shredded cheese and mix to help the meat "stick" together. put desired amount in tortilla shells roll up and place in a cassarole baking dish that has been sprayed with a non-stick spray. Mix the two cans of sauce together and pour over top cover with remainder of shredded cheese and bake until bubbling hot and cheese is melted. * I usually do half with chicken and half with chicken and refried beans. * serve with reduced fat sour cream, and baked scoops and salsa.
