Ingredients For green enchiladas

  • 1
    dozen corn tortillas
  • 1/4 c
    cooking oil
  • 2 c
    shredded monterey jack cheese
  • 3/4 c
    chopped onion
  • 1/4 c
    butter
  • 1/4 c
    flour
  • 2 c
    chicken broth
  • 1 c
    sour cream
  • 4 oz
    chopped jalapeno peppers (small can)

How To Make green enchiladas

  • 1
    Soft cook corn tortillas in oil for a few seconds. Place two tablespoons cheese and one tablespoon onions on each tortilla and roll up. Place seam side down. Melt butter and blend in flour. Add chicken broth, cook until thick and bubbly. Stir in sour cream and peppers. Pour over tortillas. Bake at 425 degrees for 20 minutes. Excellent!
