This is a quick and comfort food catagory for as easy casserole that everyone has loved everytime I have made it.

Ingredients For green chili enchilada casserole

1 lbground lean beef

1/2 conion, chopped

1 tspred chili powder
-
1 pkgcorn tortillas
-
1 pkgcheddar cheese, shredded

1 cancream of mushroom soup
-
1 canmilk
-
1 can4 oz. can chopped green chili
How To Make green chili enchilada casserole

1Brown lean ground beef Add chopped onion and cook with beef till meat is well browned. Add chili powder. ( If you like very spicy, add more to taste)

2Spray a 8X8 square dish. Quarter each corn tortilla and layer in bottom of dish to cover. Add meat mixture to cover. Add 1 4 oz. can chopped green chili over all. Spread cheese to cover. Add another layer of corn tortillas, meat mixture and green chili. Top with more tortillas and top with cheese. Pour soup diluted with milk over top of casserole to cover all.

3Bake in a 350 degree oven for 40 minutes or till heated through. SPECIAL NOTE: Can make only one layer if desired. If making a larger casserole double meat. Will also freeze well.
