My family loves Mexican. I came up with this recipe after desperately searching the pantry for something for dinner. Now it is almost a weekly request. I hope you enjoy it as much as we do.

Ingredients For green chili chicken enchiladas

1 Tbspground cumin

1 tspcoriander, or 1/4 cup fresh chopped cilantro

1 tsponion powder
-
1 tspminced garlic
-
1 tspseasoned salt

4 ozchopped green chilis

juice of one lime
-
2boneless skinless chicken breasts

1 cangreen enchilada sauce

4flour tortillas, 8-10 inches

2 cmonterey jack cheese, shredded.
How To Make green chili chicken enchiladas

1Mix first 6 ingredients and lime juice in medium saucepan. Add chicken breasts and cook over medium heat until done, about 25-30 minutes.

2Shred chicken and return to saucepan. Mix to coat chicken.

3Divide chicken between 4 tortillas. Top with 1/8 cup cheese. Roll tortillas and place in greased 11x7 baking dish. Pour enchilada sauce over tortillas and top with remaining cheese.

4Bake at 350° for 20-30 minutes until heated through and cheese is melted.
