We love casserole recipes because dinner can be made in a snap. Whether you eat this with a fork or tortilla chips, you'll be in for a treat. It's easy to prepare and is layered with rice, meat, salsa, and cheesy goodness. We thought it had just the right amount of heat, but you can easily adjust that by adding a hotter (or more mild) salsa. Very versatile, this will make its way into your weekly dinner rotation.

Ingredients For fiesta casserole

1 -1 1/2 lbground meat (your choice)

2 pkgchicken rice (Knorr is what I use. Flavor is spot on.)

1 canRotel tomatoes (I use green chili though some like it hotter.)

1 jarRagu cheese sauce (by the spaghetti sauces in the store. It's the orange one.)

1 jarsalsa
-
1 pkgtaco seasoning
How To Make fiesta casserole

1Cook rice as directed on packages.

2Brown meat and add taco spice. (I make my own with coriander, cumin, garlic, onion, chili pepper, pepper, salt. ) Pre-pack is fine. Add Rotel tomatoes. Simmer for 4 minutes.

3Spread rice in 9 x 13 dish.

4Top with meat.

5Top with salsa. Any kind is fine; my kids tend to like it with the peach or the sweeter type salsa as the Rotel tomatoes have a bite.

6Top with Ragu cheese sauce.

7Bake for 30 minutes at 350.

8Pull from oven and allow to rest for at least 15 minutes, Get your chips and DIG IN!
