Ingredients For * enchilada casserole * in the crock pot *

12-14 small flour tortillas
-
1/2 lb ground beef/ i use ground turkey, seasoned browned and drained

1 can black beans, drained

1 jar salsa ( i used mild)

1 medium onion, chopped
-
1 can enchilada sauce ( i used mild )
-
2 cups sheredded cheese ( i used colby jack blend )
-
salt and pepper,onion powder,garlic powder,chile powder to taste
-
non-stick spray
How To Make * enchilada casserole * in the crock pot *

1spray the crock pot liner with non-stick spray

2Brown the ground beef/ or ground turkey with salt,pepper,onion powder,garlic powder & chili powder

3line the bottom of the crock pot with the flour tortillas. ( You may need to cut some in half ) I used 3 1/2 per layer

4Next spread 1/3 of your meat,1/3 of the black beans,1/3 of the onion, 1/3 of the salsa, 1/3 of enchilada sauce & 1/4 of the shredded cheese over the bottom layer of tortillas

5Now make 2 more layers just like you just did!! Just reserve a tiny bit of Enchilada sauce for top layer!!

6lastly, place one last of tortillas on top that with the last bit of enchilada sauce and cheese

7cook on LOW for 4-6 hrs or on HIGH for 2 hrs
