Ingredients For easy spicy black beans and rice casserole

2-3 ccooked white or brown rice

1 canblack beans rinsed and drained

1 canniblets corn

2 cshredded cheese, divided

1 clowfat sour cream

1 csalsa
-
1 canblack olives
-
1small to medium red onion chopped

1 cansliced jalapeno peppers, not pickled

1 canrotel

*or 1 28 oz can tomates, + small chopped onion, +jalapeno's to taste, +1 tsp onion salt,+ 1/2 tsp cumin, +pinch of sugar,and chopped hot peppers, 1 -3tbs,... instead of the rotel and salsa
How To Make easy spicy black beans and rice casserole

1In a large bowl, mix rice, beans corn, rotel, salsa, sour cream and 1 cup of cheese. (I added Tobasco sauce, about 3 shakes, was Very spicy, like WE like it.)

2Pour into a greased 13x9 dish. Top with chopped onion and halved black olives. Bake at 350 degrees for 30 minutes.

3Top with a thin layer of salsa, sliced jalapenos, and cover with the other cup of cheese . Bake until cheese melts, and starts to brown a little.
