This is my quick and easy version of Spanish Rice. I use it for a main course, but you can also use it as a side dish. Make it spicy or not.

Ingredients For easy spanish rice

2 Tbspolive oil

1 mdonion, diced

2 clovegarlic, minced

1green pepper, diced
-
1 cbasmati rice, rinsed and drained

1 pkgmorningstar farm® meal starters grillers® recipe crumbles™ (or if you desire, 1 lb ground beef, cooked and drained)

3 cvegetable juice (such as v8®) or tomato juice

dashcayenne (to taste)

salt and pepper to taste
How To Make easy spanish rice

1Heat oil in large skillet. Add onion, garlic and green pepper and saute until tender.

2Stir in rice. Cook for 2 minutes. Add Grillers (or ground beef), vegetable juice, cayenne and salt and pepper. Cover and cook until rice is tender and has absorbed the liquid-about 20 minutes. Stir occasionally.

3Adjust seasoning, if necessary, and serve.
