Ingredients For easy spanish rice bake

  • 1 lb
    or more hamburger
  • 1/2 lg
    sweet onion diced
  • 1/2
    bell pepper diced
  • 2 clove
    garlic diced fine and mashed a bit
  • 2 c
    cooked long grain rice
  • 1 c
    salsa
  • 1 Tbsp
    taco or chili seasoning or see note
  • 1 Tbsp
    or just a squeeze of lime juice
  • 8 oz
    shredded cheese
  • pinch
    salt and pepper to taste
  • 1 tsp
    garlic powder

How To Make easy spanish rice bake

    In a large skillet in a small amount of oil (I use olive oil) saute onions and peppers. When they start to become tender add in ground beef. Stir and chop as it browns. Add in garlic. I use lean ground beef so there is no need to drain, however if you are using beef with a little more fat drain once it is nicely browned. Meat should be well chopped and small.

    Add in seasoning. I posted chili or taco seasoning, but because I have to watch my salt intake I make my own using the following, 1 tbs or more of chili powder, 1 tbs cummin, 2 tsp garlic powder, 2 tsp onion powder, 2 tsp Mrs. Dash's lemon pepper and 2 tsp Mrs. Dash's hot/spicy pepper mix. I put this in a bowl, and stir in as much or as little as I need a little at a time. If you don't have to watch your salt just use the ready made taco/chili seasoning!

    Add in the cooked long grain rice (you can use minute rice if you want) stir and mix the rice into the meat until well combined. Add in salsa which ever level of hotness (or not) that you desire. Mix well, if it seems to too dry you can either add in more salsa or a little water. Add in squeeze of lime. Once it is well combined top with cheese. Remove from heat, cover with a lid or put in the oven on 350 until cheese melts.
