easy cheesy enchiladas

This recipe is from my good friend Mary Fitzgerald. We had a Mexican Fiesta at our home and she brought this dish. We LOVED it! It was so easy! I never get tired of this recipe and my family always gets excited when I tell them it's Cheese Enchilada night! I serve this with Mexican Rice and Pinto Beans!

Ingredients For easy cheesy enchiladas

grapeseed oil cooking spray

1 1/2 cbutter
-
18white corn tortillas
-
4 cmexican/fiesta cheese or your favorite
-
2 canold el paso mild enchilada sauce
-
4green onions
How To Make easy cheesy enchiladas

1Preheat oven to 350 degrees! This is a repeating recipe!

2Melt 1 1/2 Cups of Butter in a small pot on the stove

3Spray 9x13 baking dish with grapeseed oil non-stick spray

4Layer 6 Tortillas in the baking dish (tear in strips for easier portions)

5Pour 1/2 C butter over tortillas (use a spoon or spatula to spread)to cover all of them

6Sprinkle 2 C Cheese over tortillas evenly

7Layer 6 tortillas over Cheese (tear in strips and spread evenly over mixture)

8Pour 1/2 C butter over tortillas (spread around) and then pour 1 can of enchilada sauce over the buttered tortillas

9Now, sprinkle most of the second 2 C Cheese on top of enchilada sauce

10Pour 1/2 C butter over tortillas (spread around) and then pour 1 can of enchilada sauce on top of tortillas (spread around)

11Chop 4 Green Onions and sprinkle on top of sauce and sprinkle remaining cheese on top.

12Bake for 20 minutes, eat and enjoy!
