had a friend of my moms show me this when I was very young. every time I cook it people love it, even the kids. you can change it up to be hot or mild. good hot or cold.

Ingredients For chicken enchaladas

1whole chicken

2 box8oz cream cheese
-
8 ozshreeded cheese, your prefance

1 qthalf and half

24 mdcorn tortillas

1 jargreen chiles, mild or hot (to taste)
How To Make chicken enchaladas

1need cassarole dish, heat over 375, cook for 45min to 1 hour

2cook chicken until tender, de-bone and shred. mix in the cream cheese and chile, i mix by hand so not to make mushey. sofen the corn tortillas in canola oil. add 3-4 Tbsp of the chicken mix and roll up cont.until mixture is gone, you can stack 2 high add shreaded cheese on top, pour half and half on top then bake.
