Ingredients For cheesy mexican rice bake

  • 1 lb
    ground beef
  • 1 lg
    onion chopped
  • 1
    green pepper chopped
  • 1
    red pepper chopped
  • 2 tsp
    garlic powder
  • 1 Tbsp
    chili powder
  • 1 tsp
    ground cumin
  • 2 pkg
    bovril dry beef stock
  • 1 tsp
    salt
  • 2 tsp
    black pepper
  • 1 c
    salsa, chunky
  • 3 c
    shredded cheddar cheese
  • 3 c
    water
  • 1 1/2 c
    white rice
  • lettuce, chopped tomato, olives, sour cream, nacho chips, salsa.

How To Make cheesy mexican rice bake

    Brown ground beef in skillet
  • 2
    Add in onions, peppers, and seasonings and saute until vegetables are just soft
  • 3
    Pour in water,add Bovril,salsa and rice and heat just until liquid is just starting to boil.

    Place mixture in a 6 cup, greased casserole dish and bake in 350 degree oven for 30 minutes.

    Place cheese on top of casserole and continue to bake until melted and golden.

    Remove from oven and let sit 5 minutes before serving.

    Top with all of your favorite Taco toppings and enjoy.
