I made this for lunch last week (had stuff in the fridge). Simple, but yummy. Would make a good side dish for dinner, also.

Ingredients For broccoli with tomatoes

2 tspbutter, unsalted (or olive oil if you prefer)

1-2 clovegarlic, minced

1 can14.5 oz. diced tomatoes w/chiles, do not drain (italian style would also work well)

1/8-1/4 cfresh cilantro, chopped (or basil if using italian style tomatoes)

1 1/2 lbbroccoli florets

salt and pepper, to taste
How To Make broccoli with tomatoes

1Melt butter in a large, non-reactive saucepan over medium high heat.

2Add garlic, tomatoes and cilantro; simmer uncovered 2-3 minutes.

3Add broccoli, and salt and pepper to taste.

4Reduce heat to medium. Cover and simmer 7-8 minutes or until broccoli is tender.
