bean & cheese quesadillas

I put these together tonight out of just wanting to use left overs and they turned out great.

Ingredients For bean & cheese quesadillas

  • 1 c
    or can black or pinto beans, cooked
  • 1/2-1 can
    diced tomatoes
  • 1 Tbsp
    taco or chili seasoning
  • 8 oz
    shredded cheese of choice
  • 8-10
    flour tortillas

How To Make bean & cheese quesadillas

  • 1
    Place beans, tomatoes & seasoning in food processor and process until well incorporated. (It doesn't need to be perfectly smooth)
  • 2
    Spoon about 1/4 cup of mixture onto one tortilla.
  • 3
    Cook quesadilla on a griddle until golden on each side. If desired you can spread each side with butter before cooking.
