I copied this recipe many years ago. I don't remember the original source, and I don't know how it got its' name - did it win a contest? the original authors' opinion? - Having not yet tried it, I don't know if it lives up to its name! I 'googled' it, and was surprised to get several hits, but no indication to its origin. I am posting it 'cause it sounds interesting - and easy. If you try it let me know what you think! Ingredients For $25,000 mexican dish

  • 1 c
    buttermilk baking mix (such as bisquick, or home made)
  • 1/2 c
    water
  • 1 can
    refried beans (15 oz)
  • 1 lb
    ground beef
  • 8 oz
    salsa
  • 1 and 1/2 c
    cheddar cheese, grated

How To Make $25,000 mexican dish

    Pre-heat oven to 350 degrees.

    Mix baking mix, water and beans well. Spread in a greased 5-inch by 7-inch baking dish.

    Brown ground beef; drain. Spoon over the baking mix 'crust'. Spread salsa on top of beef, then cover with the grated cheese. Bake covered at 350 degrees for 30 minutes, uncovering for the last few minutes. Serve with sour cream and chopped fresh tomatoes.
