Ingredients For slow cooker meatloaf plus

  • 2 Tbsp
    olive oil
  • 2 tsp
    garlic minced
  • 2 1/2 lb
    gound beef, 90 percent lean
  • 1/3 tsp
    thyme, dried
  • 1 1/4 tsp
    kosher salt
  • 1/2 tsp
    pepper
  • 1/4 c
    beef broth
  • 2 Tbsp
    worcestershire sauce
  • 2
    eggs
  • 3/4 c
    breadcrumbs
  • 3/4 c
    ketchup, divided
  • 1 Tbsp
    parsley, dried
  • 1 lb
    small potatoes, peeled and halved
  • 1 lb
    carrots, peeled and cut in chunks
  • cooking spray

How To Make slow cooker meatloaf plus

    Spray a 6 quart slow Cooker / crockpot with cooking spray.

    Heat 1 tablespoons of the olive oil in a small pan over medium heat and add the minced garlic and cook for 30 seconds.

    In a large bowl add the garlic, ground beef, thyme, salt, pepper, beef broth, Worcestershire sauce, eggs and breadcrumbs. Stir well to combine. I use my hands.

    Mix the remaining olive oil and the potatoes and carrots. Season with salt and pepper.

    Form the beef mixture into a loaf and place in the slow Cooker.

    Slather the loaf with half of the ketchup.

    Add the potatoes and carrots around the loaf.

    Cover the slow Cooker and cook on low for 7 - 7.5 hours. Check to make sure vegetables are tender.

    Slather the remaining ketchup over the cooked meatloaf and sprinkle with parsley. Slice and serve.
