Ingredients For slow cooker meatloaf plus

2 Tbspolive oil

2 tspgarlic minced

2 1/2 lbgound beef, 90 percent lean

1/3 tspthyme, dried
-
1 1/4 tspkosher salt
-
1/2 tsppepper
-
1/4 cbeef broth
-
2 Tbspworcestershire sauce
-
2eggs
-
3/4 cbreadcrumbs
-
3/4 cketchup, divided
-
1 Tbspparsley, dried
-
1 lbsmall potatoes, peeled and halved
-
1 lbcarrots, peeled and cut in chunks

How To Make slow cooker meatloaf plus

1Spray a 6 quart slow Cooker / crockpot with cooking spray.

2Heat 1 tablespoons of the olive oil in a small pan over medium heat and add the minced garlic and cook for 30 seconds.

3In a large bowl add the garlic, ground beef, thyme, salt, pepper, beef broth, Worcestershire sauce, eggs and breadcrumbs. Stir well to combine. I use my hands.

4Mix the remaining olive oil and the potatoes and carrots. Season with salt and pepper.

5Form the beef mixture into a loaf and place in the slow Cooker.

6Slather the loaf with half of the ketchup.

7Add the potatoes and carrots around the loaf.

8Cover the slow Cooker and cook on low for 7 - 7.5 hours. Check to make sure vegetables are tender.

9Slather the remaining ketchup over the cooked meatloaf and sprinkle with parsley. Slice and serve.
