- MEATLOAF

1 1/2 lbground beef

1/2 lbground pork

1/2 cupchopped onion (about 1/2 of a medium onion)

1 mdbell pepper, finely chopped

4 mdgreen hatch chile peppers, finely chopped

1/2 cupplain bread crumbs

1 (10-oz) canrotel tomatoes (or any variety of canned diced tomato with green chilies)

1 (8-oz) cantomato sauce

1 tspminced garlic

2 lgeggs, beaten
- SPICY TOPPING

3/4 cupketchup
-
1/2 tsphot sauce

1/2 tspchili powder
How To Make santa fe green chile meatloaf

1Preheat oven to 400°F.

2In a small bowl, thoroughly combine the ketchup, hot sauce and chile powder. Cover bowl and keep in refrigerator until ready to use.

3Combine all of the meatloaf ingredients until well blended, and pat it into a 9x13-inch baking dish. Bake for 45 minutes, uncovered. Spread the spicy ketchup across the top of the meatloaf, and continue baking another 15 minutes. Let stand 10 minutes before serving.
