Not only is this meatloaf good, it is also very pretty with the mashed potatoes lightly browned. Mom was such a fantastic cook, and not only was taste important, but also presentation.

Ingredients For potato topped meatloaf, mom's

  • 1 1/2 lb
    hamburger
  • 1/2 c
    bread crumbs
  • 1/4 c
    chopped onion
  • 1
    egg, well beaten
  • 1/4 c
    ketchup
  • 1 1/2 tsp
    salt
  • 1/2 lb
    cheddar cheese, in 1/4" pieces
  • 3/4 c
    mushroom stems and pieces, drained
  • 1/8 tsp
    pepper
  • 2 c
    mashed potatoes, hot

How To Make potato topped meatloaf, mom's

  • 1
    Combine all but potatoes in large bowl. Blend well, press into greased 9x5 loaf pan. Bake at 325 degrees for 50-60 minutes. Remove from oven, let sit in pan 5 minutes. Drain off fat. Invert meat loaf onto ovenproof platter. Spread potatoes over the top and sides of the meat. Place under broiler until delicately browned.
