I enjoy using ground turkey in meatloaf, as it's lighter than beef, lamb or pork. And if it's prepared properly it can be just as tasty, if not more so. We have a friend who loves my meatloaf and it's become an occasional tradition for her to come over on Thursday nights for my meatloaf. With the added Worcestershire and BBQ sauces, the egg and the oil from the sauteed onions and mushrooms, it'll come out moist and flavorful. Don't use the 99% extra lean as it's too dry. If you like your meatloaf with a little more zing, add chopped Ortega mild chilies or jalapenos or beyond for extra spice.

Ingredients For my thursday night meatloaf

  • 1/2 c
    milk
  • 1/2 c
    panko bread crumbs
  • 3 Tbsp
    olive oil
  • 1 c
    chopped onion
  • 2 tsp
    kosher or sea salt, divided
  • 2 tsp
    fresh ground pepper, divided
  • 1 c
    chopped mushrooms
  • 3 Tbsp
    minced garlic
  • 2 lb
    93% ground turkey
  • 1
    egg
  • 2 Tbsp
    Worcestershire sauce
  • 1/2 c
    bbq sauce
  • 1/2 c
    ketchup, for topping
  • 1 c
    crispy fried onions

How To Make my thursday night meatloaf

  • My ingredients all ready to go.

    Pre-heat your oven to 375 degrees F.
  • Adding the panko/milk mixture helps keep the meatloaf moist.

    Pour the milk and panko into a small bowl and combine. Set aside to allow the panko to absorb the milk.
  • Onions, mushrooms and garlic getting happy together.

    Heat a medium sauté pan to medium high and add the olive oil. When the oil is hot, add the chopped onions. Lower the heat to medium. Season with part of the salt and pepper. Cook for about 2 to 3 minutes until the onions start to turn translucent. Add the mushrooms, and a little more salt and pepper and cook for an additional 2 to 3 minutes. Add the garlic and cook an additional 2 minutes. Turn off the heat and set aside.
  • Everything together ready to be combined before baking.

    Crumble the ground turkey into a large mixing bowl. Add the egg, Worcestershire and BBQ sauces, the panko/milk mixture and the remaining salt and pepper. Pour in the sautéed onions, mushrooms and garlic, oil and all. Combine thoroughly. (I like Stubbs Original BBQ Sauce.)
  • Meatloaf topped with ketchup and crispy fried onions.

    Scrape the turkey mixture into a well greased loaf pan. Using a squirt bottle, squeeze the ketchup onto the top of the meat followed by the crispy fried onions.
  • Dinner is served along with roasted baby potatoes and broccoli.

    Bake on the middle rack in the oven for 40 to 45 minutes or until a meat thermometer reads 155 to 160 degrees F. Check at about 35 minutes so it doesn't overcook.

    Remove from the oven, cover loosely with foil and let rest for 5 to 10 minutes. The meatloaf will continue cooking for a few minutes. Slice and serve.
